Waiters, also called servers, look after guests from the moment they sit down until they pay. Restaurants, hotels, cafes, bars and banquet halls in Nepal hire them all year, and tourist areas such as Thamel and Lakeside hire many more in the trekking seasons.
The roles in a dining room
Host. Welcomes guests, manages tables and the waiting list.
Waiter or server. Takes orders, serves food and drinks and handles the bill.
Food runner or server assistant. Carries food from the kitchen, clears and resets tables.
Captain or head waiter. Runs a section of tables and the team in it.
